A Linearization Model of the Stress Relaxation Curves for Fruits and Vegetables




Abstract
A generalized linearization model for stess relaxation curves of vegetative tissues was proposedas [F_(0)t^n/{F_(0)-F}=k_t + k©üt], taking into account internal structure changes under a constant strain. Where F$quot; is the initial force, F is the decaying force after time t, and k©û, k©ü and n are constants. This model was well fit to stress relaxation curves of a variety of raw and processed fruits and vegetables.
